Sauvage : New Upscale Mediterranean Restaurant in the Heart of Old Montreal

With everything that happened in the last 18 months, it is reassuring to see that Montreal has not lost its spirit. More restaurants are opening and even though it is a dicey timing, we know montrealers have responded eagerly when establishments opened back up, and the summer is not over yet. We are excited to go out there and support our fellow restauranteurs, with each opening looking as amazing as the next one! Sauvage is finally open and offers incredible Mediterranean food complemented by an impressive wine list, all that at a prime location.

It’s Matt Guerguerian, founder of 2K Consulting, that is behind this latest culinary project called Sauvage. A high-end Mediterranean restaurant in the heart of Old Montreal, with a menu inspired by the South of France and based around noble products.

There is also a notable wine list and elaborate cocktails, all encompassed in an unforgettable flavourful experience. Located at 52-54 St-Jacques street where the hip destination Joverse used to come alive, Sauvage enjoys the prime location and adds a nice terrasse to the mix, the biggest of that street, with 102 possible seats.

Executive chefs Christopher Shawn Pierre (Modavie, Jacopo) & Sary Hussein (Vallier Bistro, Restaurant di Menna) will run the kitchen. Mediterranean cuisine from the market will be honored, with beautiful pieces of meat, fish and seafood. The Sauvage menu makes your taste buds travel to different regions of the Mediterranean for a unique taste experience including oysters, Mezze platters to share, fresh tartars, ceviche, grilled fish, as well as a filet mignon and lamb, all prepared in gorgeous recipes we don’t find on every corner.




Portions are generous, staff is very welcoming and flavours are there. Don’t expect the traditional recipes to be on your plate, as they are aiming to offer some classic dishes with their own twist. It’s fun to discover if you wish to try new tasty combinations while enjoying great drinks and wine.

To reinvent the magnificent 3,200 sq. ft. space spread out on two floors, Guerguerian called on the expertise of the Gaulay Brothers (Bird Bar, Foiegwa, Awater Cocktail Club). A new lighting system was developed and integrated into the sound system for a unique atmosphere, to highlight the magnificent architecture of the heritage building.

There is also a huge light fixture that is a show-stopper, that represents the fire humans have gathered around since the beginning of time, according to Gauleybrothers co-designer Toby Gauler. Its LED lights are programmed to make the ceiling match the rhythm of the music when the party is in full swing, which brings a nice element of surprise.

The design concept was thought out to create two very different experiences on each floor. Upstairs is a 147-seat dining room with a raw design, textured cement walls and a majestic lighted ceiling unlike anything you have seen anywhere else. The downstairs area supports 114 seats, and is a space nicknamed “GROTTO”. It offers an elegant design and a cozy atmosphere with a mixology bar offering an impressive menu of 28 cocktails. That is where Sauvage will welcome guest DJs for special themed evenings.
