The Autumn Salad composing of quinoa, roasted buttercup squash, cauliflower and pumpkin seeds was served as the entrée. This dish truly set the bar and tone for what was to come. Its ability to capture the fall flavors was demonstrated through the dish’s varying sweet and salty auras which was intensified by the squash. For the accompanying cocktail, we were served what was called “Squash 701”. This drink consists of Sauza Blue, squash purée, nutmeg, fresh lemon and poudre de grille grilles. The varying flavors and impression of the drink was skillfully partnered to complete the autumn character of the plate.
Next up, and the main course for the evening was the braised pork jowl accompanied alongside the restaurant’s home made sausage, sauerkraut and Gaspar beer mustard. Though this plate appeared small in portions, the food was hardy enough to stand alone and leave the guests feeling satisfied. The pork jowl was strategically placed in the center deeming it the main attraction. This cut of pork is not a regular on many people’s food radar yet it exceeded all expectations as it dissolved in the mouth. Lawrence presented our table with the cocktail eloquently named, “ De Cognac en Alsace”, proving itself to not only be delicious and visually appealing but additionally generous in regards to liqueur quantity.
With the evening quickly coming to a close, Suite 701 presented us with our third and final course which was their expressive and delectable dessert. This dish consisted of Cortland Apples Strudel garnished with a chocolate dipped pretzel alongside Dulce di Lèche ice cream. The apple strudel had simplicity to it which gave it a home made feel yet, its complex flavors brought the dish its subtle richness. The accompanying cocktail cleverly named “Apple Pie Sidecar” capped off not only the final course but the entire gourmet evening.
