Creamy and satiating, it’s a simple yet refined dish you won’t get tired of. The acidity of the tomatoes cuts the richness of the cheese to create a nice balance.

After salmon, beef or even tuna tartare, here’s a deer tartare! It’s everyone’s favorite thing right now and nothing beats a refreshing well-prepared tartare.

  • Deer tongue with charcutière sauce and rémoulade

The most ambitious dish of the bunch. Our first time eating tongue and we were pleasantly surprised by the flavour, the texture of it and how they paired it with a rémoulade to elevate it. Definitely something to discover!

  • Little neck clams in a smoked cod broth and leeks

Clams with a little twist. We’re going French-Asian on this one where the broth is packed with delicate flavours that do not overpower the signature taste of clams.

  • Deer “patty melts” burger with homemade brioche

Cooked to perfection, the deer meat literally melts in your mouth. Paired with cabbage and cheese, it’s a classic with an interesting edge.
