Old Montreal’s Coldroom cocktail bar mixes history with modern day sophistication

Montreal’s Latest Speakeasy Looking to Embrace it’s Roots.

The Coldroom Cocktail Bar (a.k.a. La Chambre Froide) is already causing a stir. Located on St Vincent street in the Old Port, the latest edition in Montreal’s ever evolving cocktail scene is already setting itself apart as something “different”.

Upon finding the secret entry, which is complete with door bell and door attendant, the industrial style bar, with original steel beams and brick walls, also offers sophisticated trimmings in leather sofas, varnished bar tops and custom stools.

Housed by an actual vintage cold room (built in 1877), the Bar itself pays homage to its roots with not only its name, but its concept as well;

“This bar is all about being a bartender’s playground”, says principle owner and cocktail enthusiast Kevin Demers, “our cocktail program incorporates traditional techniques with modern day ones, while our ice program adds another element that is rarely seem in Montreal cocktail bars.”

With a custom built fridge upon entry and a small food menu consisting of cured meats, cheeses, marinades and other goodies, clients will be allowed to “build their own platters” as their appetite sees fit.

The fun it seems will not stop there, with the cocktail menu being designed with ingredients you can only find in a genuine cold room “Shrubs, Jams, Marmalades, Pickled fruits and vegetables. Ingredients that the average Joe and Jane wouldn’t think of using in a cocktail.” Demers said.
