Asian flavours and Quebec swag inspired cocktails
Flyjin, located in the heart of Old Montreal, is an Izakaya inspired restaurant that serves “Asian cuisine du marché“. They also happen to have a fantastic selection of cocktails, some of the best in the city I would have to argue.
To celebrate the arrival of the winter season they decided to update their cocktail menu. The new menu was a collaborative effort between two great minds in Montreal’s food and beverage industry; Lawrence Picard (Founder of Nectar Mixology & Director of Beverage at A5 Management Group) and Kevin Demers (bar manager at Flyjin). The art of making cocktails is nothing new to these two, Lawrence and Kevin have both won twice at GQ’s most imaginative bartender competition.
“The inspiration for these new recipes came from the simple idea of incorporating Asian flavours with Quebec swag. We really wanted to attack flavours that nobody would think of going with. We decided to work very closely with Jäger, Hennessy and Bacardi to come up with different styles that would elevate our client’s experience and also to trick the palate with new flavours” says Kevin Demers.
1- Izanami
Ingredients:
1 1/2 oz Sake
1 oz Glenmorangie
1 oz Rosemary simple syrup
Top with Pares Balta
Garnish orange zest & Rosemary

2- Imperial Mule
Ingredients:
1 1/2 oz Hennessy
1 1/2 oz Cranberry Vanilla simple syrup
1/2 oz Orange Juice
Top with Ginger Beer
Garnish with Cranberries, Mint head and powdered Sugar

3- Hotei
Ingredients:
2 oz Bacardi
1 oz Belle de Brillet
1/2 fresh lime juice
1 oz simple Syrup
Garnish with tai chili

4- Ginseng Sour
Ingredients:
1 1/2 Dillon’s Gin Rose
1/2 Amaro Montrenegro
1 oz Elderberry Puree w/ ginseng
1/4 lemon juice
Egg white
Garnish with edible flower/ orange zest

5- Sohei
Ingredients:
1 oz Green Chartreuse
1 1/4 oz Jagermister
1 1/2 oz yuzu simple syrup
Egg white
Rim glass with kaffir lime oils
Garnish with kaffir leaf and star anise

*Bonus 6 – Flyjin Old Fashion
The Flyjin Old Fashioned was the only recipe Keven was hesitant to divulge. “As for the Flyjin Old Fashioned , unfortunately I can’t help you there 😉 , they all have a special flair to them that we can’t discuss 😉” says Keven Demers. I did find a video that demonstrates a few of the steps on their Facebook page. From what he did tell me they use a special process that involves smoking the drink.
